The Mac Is Back With Macaroons

Looking for a tasty treat? You can’t really beat a macaroon. Of course, there’s lots of treats out there but there’s something about macaroons which make it special. Let’s find more about this delicious and little piece of heaven.

Cake enthusiast or not, everyone has heard of a macaroon. The little small cake that comes in different colours. The cake that is made from potato, almonds or even nuts. And lets be honest its just delightful.

You can be creative when making macaroons. One of my favourite types is the coconut flavour! This is a healthy option as it isn’t full of flour or gluten so you can eat happy and guilt free. Here’s a recipe I came across.

  • 4 egg whites
  • 1/4 table spoon of fine sea salt
  • 1 table spoon of honey
  • 250g of casting sugar
  • 200g of coconut (of course)
  • 1/2 table spoon of vanilla extract

Okay, so we’re now set to go ahead and make them! Set the oven to 180°C and use a baking tray with foil. Use an average sized pan over a medium heat while stirring. Stir constantly – that’s important! You’ll then notice it mixing better together when it warms up. At this point, turn the heat to a lower temperature  and keep stirring until its all melted and looks yummy! As you stir, the mixture with look thick, be careful that it doesn’t stick to the bottom of the pan though.

This is the delicate bit. Gently scoop the mixture on the (lined) baking tray, making sure the mixture has enough space to enlarge. Keep in the oven for around 20 minutes until the treat looks golden. Then, their ready. As easy as that. Leave them to cool before serving.
