America; the land of the oppurtunity to some. For us its the country responsible for the greatest snack of all time; the peanut butter and jelly sandwich. It may be sacrilege to some for us to say jelly but we don’t discriminate our jammy cousins across the Atlantic.
With great spreads come great responsibility though and with that advice we’re going to share with you our take on another American staple of the humble cookie. Yes we’re going to be telling you how to make the best ever tasting peanut butter and jelly cookies you’ve ever tasted.
2 1/2 cups flour
1 cup sugar
1 tsp baking soda
1/2 tsp salt
1 1/2 cups peanut butter
125g butter (at room temp)
2 tbsps milk
1/2 cup of jelly
Preheat oven to 180°.
Combine the sugar, flour, soda and salt in a bowl.
Add both butters.
Mix until the consistency is crumbly and thick.
Add the milk.
Roll dough in to balls (ping pong size).
Indent each ball with your thumb in the middle.
Place each ball on a baking sheet leaving at least 1 1/2 inch between each ball.
Fill each indent with a scoop of your preferred jams.
Bake for 15 minutes or until edges are browned.
Cool them on a rack.
If you want to kick it up a notch, why add not tiny chunks of milk or white chocolate in to the mix before adding the milk. It’ll make for a cookie that no one will resist.
