You don’t just have to rely upon a piece to get your jam sandwich fix. We found a recipe for making marshmallow jam slices that is easy to make and even easier to enjoy. The only hard part will be figuring out which berry jam you want to use.
1/2 Cup caster sugar
1 Cup flour
1/2 Cup Coconut flakes
150g Butter melted
1 Cup jam
6 Crushed digestive biscuits
Preheat oven to 160°, line a baking tin with paper with a little overhang.
Combine biscuit, coconut and flour in a bowl. Make a well in the middle.
Pour in melted butter and mix in to ingredients until everything is evenly mixed.
Pour mixture in the tin and flatten to an even layer. Bake for 25 mins or until top is nicely browned.
When out to cool, layer jam all over liberally and place the marshmallows all over.
Put back in the oven for 5 minutes.
When they look soft to the point of mixing together, take it out and let to cool.
Slice and serve.
